I don't know what you're going for in Sol y Luna but it looks like high contrast rather than low contrast. In this case, it seems to me there isn't quite enough contrast between the background and foreground. Colour Contrast Check tells me the contrast ratio is too low to make it WCAG 2 AAA compliant. The foreground would have to be brighter and the background darker to make that work.
I'm by no means an accessibility expert so it's just my 2 cents but I checked existing themes and the contrast ratio is much higher.

I'm not actually sure what I was going for either -- I had tried making it actually high contrast, but at that point stopped trying to because looking at it hurt my eyes too much :). I think I shall leave the Sol y Luna as a draft for a while until I can figure it out.

You're right. I accidentally wrote 'visible' instead of 'viewable'. I seem to do this a lot! However, it should be fixed now.

Blah. I'm going to start over with the EasyRead one at some point later from a blank layer, because no matter what I do I just can't manage to make it work.
